Undoubtedly Sichuan Cuisine features hot and spicy is one of the most popular cuisines in China. It is said that one hundred Sichuan dishes could have one hundred different flavors. Pepper and chili play a key role in the success of Sichuan Cuisine. You could see Sichuan restaurants everywhere in China, and even in foreign countries, but the most authentic Sichuan food could be only found in the hometowns of Sichuan food, Chengdu, which are called paradise of food lovers.

 

Mapo Bean Curd (Mapo Tofu)

Mapo Bean Curd is one of the most famous dishes of Sichuan Cuisine, and especially popular among foreign tourists. This dish uses chili-and-bean sauce to cook bean curd. The dish is often topped with minced meat, normally pork or beef. Ingredients include water chestnuts, onions, and other vegetables, or agarics. Mapo Bean Curd features spicy, tender and soft.

 

Bobo Chicken

Bobo Chicken was originated in Leshan city but grew popular in Chengdu. Skewer cold slices of chicken, sliced vegetables and sliced dried tofu are served in a vessel full of chili sauce. Different from “Ma La Tan”, a spicy hot snack, this dish is served cold. The food on the sticks is cooked and steamed and then served in a spicy soup as it slowly cools down.

 

Dou Hua

Dou Hua is a Chinese dessert made with an extra soft tofu. It is also called a kind of tofu pudding. Dou Hua in Sichuan is often made without any sugar at all, and served with a number of seasoning such as chili oil, soy sauce, Sichuan pepper, scallions, and nuts.

 

Fuqi Fei Pian

Fuqi Fei Pian (literally means Husband and Wife Lung Slices) is made of thinly sliced beef, bovine lung, and tongue. The materials are seasoned with chili oil and special made sauce.

 

Sichuan Hot Pot

Maybe the most notable feature of Sichuan Hot Pot is spicy. Because of the humid and cloudy climate of Chengdu, locals love to eat spicy to keep warm and get away of eczema. The main ingredients of the soup include hot pepper, Chinese crystal sugar and wine, pungent herbs and spices are added. Slices of kidney, chicken breast, beef tripe, goose intestines, spring onion, soy bean sprouts, mushrooms, duck and sea cucumber are of the most popular dish. Sesame sauce blends ginger, sesame, and leek flower enhances your eating experience.
